Pies. Mmmm, pies.


Or perhaps I should say, “Mmmm, crust.” Of all the temptations in the kitchen of a baker, pie crust scraps are my undoing. What’s not to love about all-butter pâte brisée? Pies, to me, are all about the crust. Pie crust needs to provide a hearty balance for the sweetness that sits atop it.

Able Baker pies are baked fresh to order, and the offering changes with the season. Unless otherwise noted, crusts are all-butter pâte brisée.

A word about the heart-healthy apple: This pie features an olive oil crust, so it’s more crumbly than its flaky butter cousin. The apples and spice filling has no sugar or artificial sweeteners of any kind. Truly a guilt-free dessert.

Apple Pie: as American as they come. Classic, flaky, butter crust filled with apples, cinnamon, nutmeg (my favorite spice in the whole world), and a few pats of butter.

Blueberry Pie: This one is loaded with fresh fruit instead of that gummy supermarket blue goo, and the lattice crust reminds me of Aunt Bea (she was a baker, wasn’t she?) Either way, it’s a lovely pie for summer. Serve at room temperature; stick the leftovers in the fridge after a day or so.
